Hosts and moderators can quickly mute and unmute all callers (apart from the host and assigned moderators) by using the controls on the right side of the screen with the third button from the top.

When muting a prompt will ask for confirmation and ask whether or not to allow participants to unmute themselves.  Uncheck to prevent them from unmuting themselves.
